Endurance is built with trotting and hill work. Walk/trot, walk/trot instead of running. Even race horses breathe hard after a while galloping, could be he needs more endurance work or less galloping. As to weight this time of year. IMHO, If you live where winters are cold and grazing is limited, a “little” extra weight is needed going into the winter. (Old-fashioned as I am). My horses always lose weight in winter. However if the body score is over 7, you run health risks like EMS, laminitis, and founder so I would limit time on pasture – try a dry lot for 12hrs each day. 12 years old is the prime of life, but at 15 an overweight horse has a greater risk of health issues – PPID for example.
